This post is going to be a quick (and a late) one since I am recovering from what feels like the world's longest lasting migraine - no fun. I made this caramel upside down banana cake earlier in the week when I was looking for a way to use up some over-ripe bananas. I tend to be picky with the texture of fruits and vegetables. Once a banana becomes the least bit soft, it goes straight into the freezer to be used in baked goods. Usually, I make banana bread, but banana bread can feel so boring so I wanted to try something different.
To make this cake I used this recipe from Pretty Simple Sweet. I followed the recipe almost exactly, but I added 2 tablespoons of chia seeds. I did this to create the illusion that I was making something healthy - I was not.
